If you’ve been into aromas (over the past 20 years) and popped your head into the kitchen to say hi, then you will know Jules’ face. We grabbed a few minutes with him over coffee one morning to get to know him better and find about Noosa’s fresh produce.
How long have you worked at aromas?
A life sentence – already 20 years. I really love it, and I have been Head Chef for about 12 years. When I started 20 years ago aromas looked very different, it didn’t have a kitchen, just a sandwich maker. A lot has changed.
What’s changed about Noosa in that time?
It’s always been busy in Noosa but now it’s really busy. I remember when the Sebel (behind aromas) was just tennis courts.
What’s your favourite thing about Noosa?
The National Park and Main Beach. It’s one of the most special places in the world.
What do you love about the Sunshine Coast produce?
The variety of what’s available. There is amazing fruit and vegetables, figs, mangos, bananas, lettuce, herbs, avocados, and Noosa red tomatoes – all of which you will find in our menu.
What do you do when you’re not at aromas?
I like old cars… Also tinkering in my garden as we live in the hinterland, so I love being outside.
